Dan Rossi is currently Executive Chef of David Burke restaurant in the Venetian Resort in Las Vegas. Dan’s passion for food dates back to his early childhood. Chef Rossi was born and raised in a Cleveland, Ohio home to where food was central to family life. At a young age he would always end up in the kitchen, where he would watch and help his grandmother cook rustic Italian cuisine. The sight and aroma of meats cooking and vegetables roasting are fond memories that stay with him to this day.

When Dan was fourteen he started his career at Stancato’s a popular Italian restaurant and two years later he learned classical European cuisine. Dan saw this as his direction for the future. The chef impressed by Dan, encouraged him to go to culinary school. After graduating high school, Dan enrolled at the Pennsylvania Culinary Institute in Pittsburgh, Pennsylvania.

After graduating culinary school, Dan worked with many notable chefs, including Claude Rodiér, Vincent Guerithault and Alex Stratta. These chefs were protégé of Roger Verge, John Banchet, and Alain Ducasse Burke respectively.

Dan met chef Alex Stratta at Mary Elain’s in the Phoenician Resort in Scottsdale, Arizona. His first reaction to chef Stratta’s kitchen was ‘I belong here.’ His tenure at Mary Elaine’s was two years working all throughout the kitchen, learning Alex’s system and perfecting his craft. From there he was off to Las Vegas, Nevada working at Renoir at the Mirage Hotel and Casino. There he earned his rank as sous chef and was part of a dedicated team to achieve a Mobil 5 star rating, the most prestigious award given to the best restaurants in the country. Alex then promoted him to Chef de Cuisine of Renoir.

He joined once again his mentor Alex Stratta, to head up the kitchen as Chef de Cuisine at Restaurant Alex and re-concept Stratta to a rustic Italian restaurant in the Wynn Resort in Las Vegas.

After being with Alex for 14 years, Dan joined David Burke as Executive Chef of his Whimsical restaurant in the Venetian Hotel. Together with David’s unique presentations and signature dishes and Dan’s Creative flair from the Mediterranean and Italy, the restaurant has come full circle.
