Born in the Loire valley he discovered his love for cooking with his aunt., And was offer an internship under Claude Barnier at the Plaza Athenee in Paris in 1981. After training as apprenticed at the Grand Hotel du Lion d or with chef Didier Clement 2 star Michelin Laurent move to Paris to work under 3 star chef Alain Senderens at l Archestrate Then Lucas-Carton.

In 1986 Laurent moved to Roanne to follow his training with famous Pierre and Michel Troisgros at that time he work with Joel Antunes and they became friend. Back to Paris at l Orangerie own by movie star Jean-Claude Brialy , Laurent got the opportunity To move to acclaimed Mietta s in Melbourne Australia, at same time he visit Joel Antunes at the Oriental hotel in Bangkok and work for cooking week with Michel Troisgros and Kyiomi Mikuni.

After two years in Australia return in Europe, London when as the assistant of Joel open Les Saveurs and earn 1Michelin star after only 1 year then 3 year later decide to go back to France As Chef at the 1 Michelin star Hotel du Rivage in Gien.

In 2000 Joel call him to join him again at the Ritz Carlton Buckhead at the 5 star, 5 diamond dinning room. After 2 years in Atlanta Laurent was introduce to renowned 4-star chef Hubert Keller who was opening a Las Vegas branch of San Francisco's famed Fleur de Lys restaurant. Laurent quickly Decided to move to help open Fleur de Lys in Mandalay Bay Resort and Casino. While working on the opening of the restaurant, an unusual opportunity arose Keller and Pillard- they were presented with the chance to open a restaurant that specializes in gourmet Hamburgers. Keller and Pillard accepted the challenge and succeeded in opening the highly successful in Mandalay Bay.

In September of 2004 Fleur de Lys, Las Vegas opened its doors and brought a new French Haute Cuisine experience to Las Vegas. As Executive Chef, Laurent`s talent and experience is shaping this new destination restaurant. Recent review by food editors and restaurant critics have called Fleur de Lys “perfection” and “best restaurant in Las Vegas”.

Since November of 2007 Laurent has been promoted as Corporate Chef For Chef Keller and since has open a Burger Bar and a Sleek steakhouse in Lumiere Casino in Saint Louis.
